Vegetarian: easy and tasty!!!
For the last few months I've made a few recipes with eggplants. I've never been a huge fan of the purple ones, but my kids seem to like it. As I kept eating more and more of them I really acquired the taste. So the latest creation with eggplants was Eggplant Parmigiana. I give the full credit for this recipe to Mario Batali. It is a very tasty dish and easy dish to prepare. The eggplant blends in perfectly with the homemade tomato sauce (I saved some for a pizza later) and mozarella, basil gives the freshness and parmesan cheese finishes with a nice kick!!! Hmmm.... I should have popped some white wine with too... And who said a good vegetarian dish is hard to cook?
